Our Sourdough Starters
Our breads were first born from the family's gluten-free sourdough starter, which has been fed only with organic brown rice flour for its entire life. This starter forms the base of our gluten-free offerings, which are appropriate for folks with gluten sensitivities. They are made in a sanitized environment, separately from breads containing gluten.
We also use a sourdough starter fed with wheat flour. The breads we make with our wheat flour starter may or may not be appropriate for those with gluten sensitivities—it all depends on your tolerance for fermented dough. All products containing gluten are clearly marked.
Our Flours
Our gluten-free offerings are made with King Arthur's gluten-free bread flour. Our wheat flour offerings are made with a mix of high quality bread flours
Our Olive Oils
We use only organic, cold-pressed, extra virgin olive oil in our breads—and never use dairy products. (But they are great topped with butter!)
Our Spices
We use hand-milled, organic spices and high-quality sea salt to season our breads.
